Afternoon Tea … Tacos with chickpeas, tomatoes and avocado

Serves 4 (in 1 serving: 200 kcal, 5.5 g protein, 6 g fat, 27 g carbohydrates, 4 g fiber).

Ingredients

  • 4 small tacos patties
  • 1 tablespoon olive oil
  • 1 red onion
  • 1 carrot
  • 1 clove of garlic
  • 4 tablespoons of chickpeas (approx. 80 g)
  • 10 cherry tomatoes
  • curry spice, hot pepper, cinnamon, cumin
  • Coriander leaves
  • lime juice

Preparation

Heat the olive oil in a frying pan, fry the chopped onion and crushed garlic. After a while, add finely chopped carrots and fry for about 5 minutes.  After this time, add the drained chickpeas and spices, after 3 minutes add the tomatoes cut in half. Toast the tacos in the oven or in a dry pan. Cover the inside with avocado slices, chopped coriander and the stuffing prepared in the pan. Drizzle lime over top.
