- Canned corn – 4 tablespoons (60 g)
- Egg (3 pcs)
- Olive Oil – 1.5 tablespoons (15 ml)
- Chicken broth – 0.25 cups (60 g)
Preparation
The first step in preparing rice with vegetables is to cook the rice. Pour the right amount of salted water into the pot, and then pour in the rice. Cook it until it is tender, which usually takes about 15 minutes. Drain the cooked rice and set aside.
In the meantime, we can take care of the preparation of the vegetables. Cut the red onion and pepper into cubes. Heat 1.5 tablespoons of olive oil in a large frying pan and add the chopped vegetables, frying them over medium heat until they become soft and slightly browned.
The next step is to prepare the chicken. Cut the chicken breasts into cubes and add to the pan with the onion and pepper. Fry everything together, stirring, until the chicken is golden and well done. In the meantime, you can cut the carrots into slices and divide the broccoli into small florets. Now add chopped carrots, broccoli, green beans and canned corn to the pan with onions, peppers and chicken. Sprinkle the whole thing with a pinch of salt and pepper, and then pour in the chicken broth. Simmer the vegetables and chicken, covered, for about 15 minutes, until all the ingredients are soft and full of flavor.
While the vegetables are stewing in the pan, we can prepare omelettes from eggs. Crack the eggs in a bowl and add a pinch of salt and pepper to them. Heat half a tablespoon of olive oil in a smaller pan and fry thin omelettes from the eggs. Cut the cooked omelettes into strips, which will add an interesting flavor and texture accent to the dish.
When the vegetables are ready, remove the lid from the pan and let the excess broth evaporate. Then add the previously drained rice and sliced omelettes.
