To prepare meatballs in dill sauce, we will need a few simple ingredients. The key ingredient will of course be pork, preferably ham, which we will have and form into balls. In addition, you will need onions, carrots and aromatic spices such as bay leaf, allspice or ground cumin.

Ingredients for 8 portion(s)

  • Raw pork ham (500 g)
  • Wheat flour type 1850 – 1 tablespoon (30 g)
  • Onion – small onion (50 g)
  • Egg (1 pc)
  • Dill – 4 teaspoons chopped, about half a bunch (16 g)
  • Canola oil – 1 tablespoon (30 ml)
  • Carrot – Half a small carrot (170 g)

Preparation

The first step in preparing meatballs will be to grind the ham meat and mix it thoroughly with egg, chopped dill and spices such as salt and pepper. Then form balls from the meat mass, which will be cooked in salted water with the addition of onions, carrots and aromatic spices, such as bay leaf or allspice. Cook the meatballs over low heat for about 15 minutes.

In the meantime, prepare a roux that will give the dill sauce the right consistency and intensity of flavor. Heat the oil in a frying pan, add the wheat flour and fry gently, then gradually add the ladles of sauce from the boiling meatballs, stirring intensively so that no lumps form.

When the roux is ready, add it to the boiling meatballs and cook together for a few minutes until the sauce thickens and acquires a distinct flavor. At the end of cooking, we add the rest of the chopped dill, which will add freshness and intensity to the dish.
