- 50 g rice noodles
- 5 g olive oil
- 4 g red curry paste
- 60 g chicken breast
- 60 g red pepper
- 40 g zucchini
- 150 g vegetable stock
- 40 g coconut milk
- 6 g parsley
- 2 g chives
- 2 g lime juice

Preparation
Start with the pasta: place it in a pot, pour cold water over it and leave it for 10-15 minutes. Heat the olive oil, add the curry paste and fry it briefly. Add chopped onion and finely chopped chicken meat. Fry everything for about 3 minutes. Then add thinly chopped vegetables: peppers and zucchini. After another 2 minutes of frying, add the hot broth.
Now we can add the previously soaked and properly cut pasta. Cook the soup over low heat, covered, for about 15 minutes. The next step is to add coconut milk. Mix them thoroughly with the soup, then add lime juice and the appropriate amount of salt. Before serving, it is worth sprinkling the soup with fresh parsley and chives. Enjoy your meal!
