Second breakfast … Banana pancakes

Are you intolerant to gluten or want to voluntarily get rid of it from your diet? Then try banana fritters. They are very easy to prepare, and unlike porridge, we can take them with us to university or the office. Thanks to them, we will provide ourselves with a lot of potassium, which is especially important if we use intensive training in addition to diet. How to make them?

Recipe

Ingredients:

  • 5 tablespoons of millet
  • 1 small package of natural yogurt
  • 1 egg
  • 1 ripe medium-sized banana
  • a bit of fat for frying (unless you have a Teflon pan)


Preparation

For the recipe itself, we will need millet flour. How to make it? Nothing simpler – just grind our groats in a coffee grinder, blender or mortar. If you do not have such utensils, you can grind it with a meat mallet.

Do we already have flour? Then let’s get to work! Put the peeled banana into a bowl  and mash it with a fork into a slurry. Add millet flour, egg and yogurt to it. Everything should be mixed thoroughly.

Heat up a pan and fry small pancakes on each side until they are browned. Pancakes prepared in this way can be eaten dry or seasoned with a little honey, maple syrup or fruit syrup.
