Second breakfast … Buddha bowl

Buddha bowl, or “bowl of abundance”, is a great option for a diet breakfast. Such a “most important meal” contains a lot of vitamins and minerals, you can prepare it using your favorite ingredients.

Recipe

In our interpretation of the “bowl of plenty”, you’ll find sweet potatoes with creamy avocado and protein tofu, all served with rice and a rich spice mix. Let yourself be seduced by this extraordinary taste!

INGREDIENTS:

  • 25 g basmati rice
  • 150 g natural tofu
  • 140 g avocado
  • 150 g sweet potatoes
  • 50 g mixed lettuce
  • 150 g red pepper
  • 20 g dark soy sauce
  • 4 g rapeseed oil
  • 5 g peanut butter
  • 20 g coconut milk
  • 2 g sweet paprika powder
  • 5 g radish sprouts

Preparation

Preheat the oven to 200°C in up-down mode. Cook the rice according to the instructions on the package. Drain the tofu, cut it into cubes and mix it in a bowl with half of the soy sauce and oil.

Cut the sweet potatoes into cubes, sprinkle with olive oil, season and place on a baking tray lined with baking paper. Bake for about 20 minutes. Cut the pepper into strips, peel the avocado and cut it into cubes. Fry the tofu in a hot pan until golden crust, then set aside.

In a bowl, combine the peanut butter, the rest of the soy sauce and coconut milk. Put the rice into a deep bowl and place the remaining ingredients around it. Pour the previously prepared sauce over everything.
